I think the Secret Santa plot swap stories would make a good anthology actually (and I'm not just saying that 'cos I was in it, lol) - there were some wonderful stories in there, most of them Christmas-themed of course, and it would make a lovely Christmas gift sort of thing - plus you might get a fair few copies sold if released in the Christmas present-buying season.
